NUTORIOUS White Pepper Peanut Butter Dipping Sauce with Orange, Lemongrass, and Sriracha

Snowball! The way this dip came to be, happened because one thing led to another, which led to another, and another! I had some leftovers from Canadian Thanksgiving: turkey, roasted veg, homemade cranberry sauce… and I was looking for an inspired way to honour these ingredients – a new twist on leftovers, if you will. I had just re-stocked and bought White Pepper Peanut Butter from my favourite peanut butter maker, NUTORIOUS, and wanted to bring this amazing taste into my dish.

So I started thinking… how was I going to combine peanut butter with turkey?! This led me toward an Asian-inspired set of ingredients (think: distant Pad Thai) and I created a dipping sauce for turkey wraps! To add another element to how this dish came to be, the students I am coaching in the Culinary Nutrition course, were busily making wraps and a dipping sauce for this week’s homework assignment, so I went ahead and made a version to reflect this and celebrate the ingredients I had on hand.

Lemon and lime are typical go-to ingredients for adding acidity to dishes. I love both, and enjoy one or both of these juicy bits of goodness, daily, in my hydration, and cooking. Today, because I was also using the cranberry sauce in the rice paper wrap, I thought I’d complement the orange I used in that sauce, by adding orange as the citrus in my dip. The acidity is not as high as lemon or lime, and the sweetness in the orange meant I didn’t have to use a sweetener. The addition of lemongrass brought a little of Asian freshness to the dip.

To take a little visual walk through my photo, you can see the ingredients I used for the star of this composition: The Dip! The turkey rolls include turkey…, roasted carrots, fresh crunchy cucumber, lettuce, and a dab of cranberry sauce, all enveloped in a sassy rice paper wrap.

The wraps came together easily, and this was a fresh way to use up my leftovers. Nutorious Peanut Butter is my peanut butter of choice. As mentioned, I happened to use the White Pepper version, because it’s my favourite. Wherever you may be in the world, peanut butter, almond butter, hazelnut butter…. any nut butter will do… make this delicious dip as an accompaniment to wraps, veggies, Thanksgiving leftovers…  and enjoy every bite!

Now, on to the recipe….

NUTORIOUS White Pepper Peanut Butter Dipping Sauce with Orange, Lemongrass, and Sriracha:

  • 1/3 cup NUTORIOUS White Pepper Peanut Butter
  • juice, and grated rind of 1/2 of an orange
  • 2 tsp tamari
  • 1 tsp sriracha
  • 2-3 cms of bruised, and then very finely chopped lemongrass
  • 1 clove garlic, crushed
  • 1/4 tsp sea salt
  • 2-3 Tbsp water, to bring the dip to your preferred consistency

Directions:

  1. Place all of these ingredients into the bowl of your food processor and whizz around until they are combined. Give it a taste, and adjust seasoning as desired. You may want more of ANY of the above ingredients. Go ahead, make it to your palate! Using a food processor will bring the dip to a finer consistency. You really don’t need a machine to make this dip. The tool at the end of your elbow, attached to a whisk, will work just as well!
