Waldo Pâtisserie on Amsterdam’s Elandsgracht

National Caramel Day?! You’ve got to be kidding! If I could, I would have a tap with fresh and free-flowing warm caramel at the ready in my kitchen.

I just learned that today is National Caramel Day, and as luck would have it, I paid a second visit to Waldo Pâtisserie and picked up a gloriously delicious pecan tart. The crunchy pecans are set atop of a not-quite-caramel-but-very-sweet-and-buttery-and-deliciously-thick caramelly (I think that’s a word!) sauce, and the base is equally buttery, flaky, and delicious! Close enough to satisfy my caramel craving, this tart is one of several that Waldo makes at his newly opened shop on the Elandsgracht here, in Amsterdam. I happened upon Waldo’s shop the other day when I was out, trying to buy some paint to freshen up my guest room. The paint shop was closed and just next door the lure of absolutely beautiful pastries caught my eye.

Waldo’s collection of freshly made, and baked goods is extensive! From scones to fruit and nut chocolate bark, to tarts, crumbles, chocolates, cookies, macaron, pies and cakes, there will undoubtedly be something that catches your attention the minute you walk in the door. Waldo also sells at the market in Amstelveen, and in Haarlem.

As you’ll see in the photos, I’ve had the pleasure of trying the Lemon Tart with Fresh Raspberries, a Chocolate Walnut Brownie, and a Raspberry Blondie. In these sweet treats I found flavours of the brightest of lemon, the deepest of chocolate, and the freshest of raspberry. If you’re in the neighbourhood, stop by and sample one of Waldo’s creations. On second thought, I bet you won’t leave with just one!
