Snickers Bliss Balls

Energy bites in all shapes, forms, and combinations are popping up all over the place. I find them at my local café, juice bar, and grocery store and most often, I find them in my own kitchen! Energy bites or protein balls, whichever way you roll ’em are a great snack with your morning coffee, afternoon tea, and before or after a workout. This delicious combination came to me via Wholefood Simply. I find them to be a healthy alternative to the sugar-packed chocolate bar by a similar name. This is a handful of simple, delicious ingredients rolled into a ball of protein perfection. Eat good food xxx

Ingredients

  • 1 cup dry roasted cashews
  • 1/2 cup crushed peanuts (unsalted)
  • 6 Tbsp peanut butter
  • 2 Tbsp honey
  • 2 Tbsp maple syrup
  • 3 Tbsp cocoa powder (+ extra for rolling)
  • 1/2 tsp vanilla
  • a pinch of sea salt

Directions

Place the cashews and peanuts in a food processor and blitz until they break down into a finely chopped state. Add the rest of the ingredients and mix until blended. Use your hands to press and shape the mixture into balls. Roll in cocoa powder and place in the fridge to set, about 45 minutes.
