This week’s bake from the @sundayafternoonbakingclub was Cinnamon Buns. It being Canadian Thanksgiving weekend, I made a pumpkin filling, with pumpkin-friendly spices and this is the tender pillowy result. I brushed the buns with some super-strength maple syrup when they came out of the oven, and finished them with a browned butter glaze and salted pecans.

🍅Tomato Season complements Peach Season 🍑.
As a more savoury fruit, in my home, tomatoes are currently the star of Greek salad; Caprese salad; simply chopped and combined with garlic, basil, and olive oil as a fresh tomato sauce for pasta.
🍅In these pics, fragrant, juicy tomatoes are what make up a perfect light meal: The Toasted Tomato Sandwich. 🥪
🍞Toasted sourdough bread, mayo, rucola, shallots, and…tomatoes! A good sprinkle of flaked sea salt along with a grind of black pepper, and season to your taste.
🍅🍞 These sandwiches are not for packed lunch fare. Toasted tomato sandwiches need to be made and then eaten straight away because if left to sit, the juicy tomatoes will make the bread soggy (the epitome of the soggy bottom!)
🍅 So, keep you eyes peeled for some beautiful ripe tomatoes🍅, toast a few pieces of crispy yet soft sourdough🍞, thinly slice some shallots or red onions 🧅, and add a bit of lettuce 🍃for crunch. Don’t forget the mayo, and season with S&P! Betcha can’t have just one 🤗

🍑 It starts with ripe seasonal fruit and is coupled with a flaky sweet rich shortcut pastry dough. I decided to make individual parcels because they’re fun to share (and you get to enjoy more scrummy sweet flaky dough ☺️) The recipe involves few steps and I think the final results are beautiful.

With asparagus season drawing near I thought I’d post a helpful tip ;) about this prebiotic powerhouse.
💚When I get them home from the market, I cut off the bottom cm or so, and bin that.
💚The next 2-3cms I cut off and pop in the freezer, ready to add to my morning smoothie.
💚And the remaining delicious stalks get stored, tips up, in a tall glass or jug that’s been filled with about 2cms of water to keep them hydrated.
💚 This batch has found its way into a Thai curry I’ve got simmering on the stove.
