For this week’s prompt, I decided to make tarts instead of Lemon Meringue Pie. Pie is great!, but tarts are more transportable when you’re sharing with friends, plus, you get more flaky buttery crust to nibble on. The recipe was inspired by @leithscooking and has been well-received by all taste testers 💛

Biscuits and Bubblewrap
Organizing and prepping and packing have been all-consuming these past few days (and weeks!) and I’m getting closer to having photos taken so the flat can go on the market. Took a break today to make Edd Kimber’s new recipe from his latest book: Small Batch Cookies.
Currently, anything pistachio 💚 is all the rage and these Dark Chocolate Oatmeal Cookies with Brown Butter and Pistachios make for a delicious mid-afternoon pick-me-up. (Truth be told, since they have oats and nuts in them I believe they fall into the breakfast category.) As the recipe suggests, coarsely chopped pistachios and dark chocolate bring beautiful textural elements to this cookie.
Edd’s recipe measures out to 4 rather large cookies. I made them smaller and got 8 out of the lot. Whichever size you make them they’ll be equally delectable!
P.S. This recipe is egg-free.

This week’s prompt from @sundayafternoonbakingclub is the classic 🍪🍪🍪 Chocolate Chip Cookie! In my 50 years as a baker, I’ve probably made enough cookies to easily circumnavigate the planet.
My tried and true used to be the recipe on the back of the silver Chipits bag. In the past two years I’ve devoted my 🍫chips to the exceptional recipe by @sallysbakeblog
I discovered her Chewy Chocolate Chip Cookies one evening when I had a hankering for cookies but my butter was in the freezer. A quick google search took me to Sally’s recipe featuring melted butter. Holy moly! Even better if you can make the dough the night before to encourage the sugars to add a more caramel note, these cookies are off the charts. The addition of corn starch ensures a crispy outside to protect the chewy goodness inside.
🍪I’ve always had rave reviews whenever I make them so I hope you’ll check out her website and make the recipe yourself.
*Top tip: about 8 mins into the bake, do remove the try from the oven and give it a good tap on your stovetop or a protected surface to deflate the doming, this provides a dense and chewy centre. Return the tray to the oven for another 3 mins of baking.

🤎This week’s prompt from @sundayafternoonbakingclub is, Italiano! 🇮🇹 And it’s too hot here in the Dam to be turning on any ovens so I opted for the classic, Tiramisu. A cold treat for a warm day. I used Mary Berry’s tip and grated dark chocolate over the creamy layers - an upgrade from cocoa powder 🤎
Individual jars is the way I decided to go with this. I’m slowly clearing out my flat in anticipation of my upcoming move so repurposing these jars and giving fresh tiramisu to friend (coerced volunteer 😉) who’s coming tomorrow to help paint, will be a satisfying exchange of talents 😬

🌮Tacos = Easy Friday dinner option. And these newly discovered (by me) taco tubs are a game changer. The traditional taco 🌮 is fabulous, but these tubs eliminate flying taco shells as you bite in to your dinner. Usual suspects of black beans, ground beef, and a homemade taco seasoning, provided the bed for homemade salsa, cheddar, and sour cream. A good squeeze of lime, a sprinkle of fresh coriander, and dinner is served 🇲🇽

This week’s prompt from @sundayafternoonbakingclub is one that I used in last week’s bake to top my meringues. Today, I’ve got a Perfect No-Bake Cheesecake from @sallysbakeblog that I’ve topped with sour cherry “spoon sweets” (cherries in syrup, imported from Greece.) While the cheesecake part of this is not baked, the base I made from a few broken down chocolate chip cookies I’d made earlier in the week.
So there’s a hint of dark chocolate
to complement the rich cherries. 🍒 🍫
I whipped these up with ingredients I already had on hand. No-Bake Cheesecake is a cool summer treat that can be made as a full cake and as tarts, as shown here.
⚽️ I’m off to watch the football. The colours in my dessert are a clue about which team I’ve got my 🤞 for 🏴 And away we go!
