Kudos, once again, to Wholefood Simply for bringing another delicious and nutritious treat to my kitchen. Last week, I made this Hedgehog Slice for one of my classes and they gobbled it up like nobody’s business!
The main ingredients of coconut, almond meal, dates and cocoa combine and balance beautifully in this slice of chewy, chocolatey, nutty, party-in-your-mouth! The recipe comes together in a snap, and you can have this chilling away in your fridge after about 20 minutes of prep. I like the way the lighter almond/coconut mixture complements the dense date, walnut, and cocoa combo. This fills with abundance, a large loaf pan. (Next time, I’m going to try it out in an 8 x 8 baking pan.) These are so rich with flavour, I fed one of my classes, a handful of trusted taste-testers, and I still have a row tucked away in the freezer for surprise visitors! On many levels, this recipe delivers! Give it a go 🙂
