Still Life with a Bowl of Lemons, my fresco of A Plate of Lemons, and Lemon Cheesecake Bliss Balls

With me, you can’t lose with anything that is made with lemon or chocolate!
Always happy to find a new and tasty way to add a splash of flavour to my day, I came upon these delightful bites from Wholefood Simply. Lemon Cheesecake Bliss Balls can come together in a snap! While a food processor would have them whizzed together in an instant, these can be made in a bowl, mixed with a spatula or wooden spoon. Four ingredients: Coconut, cream cheese, honey, and the zest and juice from a lemon. I happened to have mascarpone cheese in my fridge, so I used that. I think they are a bit squidgier than a cream cheese version, but I believe the flavour is pretty close. I think my lemon was particularly juicy and when I started rolling the balls, they weren’t coming together as I would have liked. I added 1/4 cup of icing sugar to the mix and this helped to absorb some of the liquid.
